Easy Standby Peas

Frozen peas are a brilliant standby vegetable, and organic petits pois are probably the best you can get for both taste and nutritional value.

In Spring and Summer months, you could use finely sliced spring onions instead of the pickled onions and also some finely chopped mint leaves.

Enough for 4 as a side dish

2 tbsp extra virgin olive oil

2 cloves of garlic peeled and crushed

4 generous handfuls of frozen organic (petits pois) peas

4 tbsp chicken or vegetable stock 

10 pickled silver skinned onions each sliced in half, optional

Sea salt flakes

  • In a medium sized sturdy pan, which has a well-fitting lid, heat the oil over low heat.
  • Add the crushed garlic and stir for a minute or so. 
  • Raise the heat to medium and add the frozen peas, the stock, the onions, if using, and a pinch of sea salt flakes and stir well. 
  • Put the lid on the pan and let the peas cook gently until tender (about 3 or 4  minutes).
  • Stir in the onions, if using, and serve.
