BAKED BARON BIGOD

For an occasional warm treat try baking this stunning British cheese with herbs, garlic and some sultanas in sherry. 

This recipe is inspired by one from Dulcie Crickmore of Fen Farm Dairy which can be found along with other Baron Bigod recipes at www.Fen farmdairy.co.uk

Enough for 2 to 4 as a snack

1 250g wheel of Baron Bigod cheese

1 Clove of garlic (crushed)

One or two small stems of rosemary or a small bunch of thyme

2 tbsp sultanas in sherry

Crusty bread or croutons and or seasonal vegetables to dip

Pre-heat the oven to 220c

Remove all the wrapping and put the cheese in a small oven-proof baking dish.

Score the top rind of the cheese and scatter over the crushed garlic, herbs and sultanas in sherry.  

Cover the baking dish with a lid or foil and bake in the oven for 10-12 minutes, or until the cheese is melting.

Let the cheese cool a little before eating with the bread or croutons or vegetables such as radishes, cucumber or carrots for example.
