Pitchfork Cheddar

The Trethowan brothers made the first batch of this traditional cheddar cheese in 2017 and by 2019 it was winning prizes, a trend which has continued, the most recent being Super Gold at the World Cheese Awards 2022. It is made at their Somerset farm using unpasteurised organic milk from their mixed herd of Holstein and Jersey Cows. Apparently, pitchforks are used in the cheese making process to toss the curd and mix the salt, which explains the name. Most importantly Pitchfork Cheddar is an elegant cheese with a creamy texture and savoury flavour.

Corra Linn

Made at by Angela Cairns of Errington Cheese at Walston Braehead Farm in Lanarkshire and is named after the local waterfall in the picture here.

A traditional hard cheddar style cheese made from the milk of Lacaune ewes. It was originally made as a solution to the problem of production of too much milk in the Spring and Summer, but it has become a great success. It is a delicious hard cheese with a robust, nutty flavour and makes an excellent British substitute for Manchego or Pecorino.
