Soup with white beans, tomatoes and greens
A quick, easy, delicious and nutritious soup for any season, using canned organic ingredients, healthy and economic too.

This soup uses dried and canned organic ingredients with some optional added greens and cheese too if you like. Some good cheddar or Old Winchester or Laganory, a raw cow’s milk cheese with a salty, nutty flavour, would be lovely. Both are good British alternatives to Parmesan Cheeses. 

Enough for 4 – 6

2 x 400g cans organic cannellini beans

2 x 400g cans organic chopped tomatoes

400mls cold water

½ tsp dried chilli flakes

½ to 1 tsp dried fennel seeds

2 tsp dried oregano

About 2 tbsp sherry vinegar (or Balsamic or Apple Balsamic vinegar)

Sea salt flakes as you like

Some greens of some sort such as a handful of baby spinach leaves, some peas, fresh or frozen or some fresh seasonal greens or herbs or some green pesto

2 tbsp extra virgin olive oil

Some of your favourite hard cheese, grated 

  • Put the beans from one of the cans into a large pan and mash them to a puree.
  • Add the beans from the remaining can along with the tomatoes from both cans, the water, chilli flakes, fennel seeds and oregano and stir together. 
  • Set the pan over medium heat and bring to a gentle simmer. 
  • Taste the soup and stir in vinegar and sea salt flakes as you like.
  • Stir in the greens or fresh herbs and cook for a few minutes as necessary.
  • Serve the soup hot with some olive oil and grated cheese.

If you want a healthier and more environmentally friendly diet, a good start would be to cook from scratch, avoid buying ready-processed meals, and so avoid foods with a high sugar and salt content. Have a look at food labels, you will likely be amazed by how much salt and sugar is included and, worse, how many of the ingredients are not recognisable as food.
