Oven Baked Basmati Rice

This oven baked method of cooking this fragrant rice works well but the recipe also works on the hob, using a low heat, so do whatever is most efficient for you. 

For 6-8 generous portions

500g basmati rice, rinsed in cold water and drained

1 cinnamon stick

2 thinly pared strips of lemon peel

1 litre of boiling water

You will also need a sturdy pan with a well-fitting lid.

Preheat the oven to 180c.

Put all the ingredients in the pan, cover with the lid and bake in the preheated oven for 20 minutes or until the rice has absorbed almost all of the water.

Leave it for 5 minutes before stirring it through with a fork before serving.
