Made by Lyburn Farmhouse Cheesemakers in Wiltshire using pasteurised milk from its cows and vegetarian rennet, this multi award – winning strong flavoured crystalline cheese is described as a cross between Gouda and Parmesan. It is an excellent “table” cheese, but it is also good for cooking or grating and, unlike Parmesan, it is suitable for vegetarians.
