In season in the UK from June to October, runner beans are best to eat as soon as possible after picking. So, they are a popular choice for home growing. But you can buy them at farmers’ markets and small holdings too – look for sturdy beans with bright green skins.
They are good to eat with many roasted and grilled meats and fish.
Cut them lengthwise into slender strands, or use a bean cutter if you have one. Boil or steam them until very tender but still bright green – they have a slightly rough edge so don’t be tempted to cook them “al dente”; this should take about 4 minutes but test one after 3 minutes. Once they are cooked, drain them, stir in a small piece of good butter and sprinkle with a little salt – nothing else needed.
