Often underrated, these punchy flavoured little roots in vibrant colours are the heart of this side dish which dumbs down some of their punchiness and tastes and looks delicious. Good with grilled and roast fish and meats and poultry; or for a lighter meal just add some labneh or goat cheese perhaps.
As ever, buy the best radishes you can get from a good farmer’s market or vegetable box supplier. Or, even better, grow your own if you can as radishes are very easy and quick to grow in a pot in the garden. You can use the leaves too if they are fresh and green. Give them a good wash and use them for salads or in stir fries.
Serves 4 as a small side dish
- A small bunch of coriander, washed
- 2 bunches of clean radishes, each radish topped and tailed and sliced into thin circles
- A small pinch of sea salt flakes
- 2 tablespoons of extra virgin olive
- 2 tablespoons of sweet plum vinegar or instead use red wine vinegar with a pinch or two of sugar
Chop the coriander leaves and stems finely.
Put all the ingredients in a roomy bowl and use your hands to gently toss them all together.
Cover and keep in the fridge for at least 30 minutes before eating. They will keep well for 3 or 4 days if covered and stored in the fridge.
