Apparently, all the good restaurants are fully booked up this weekend so you may need to make your own special food to celebrate those tentative steps out of lockdown. You might consider this simple picnic is the way to go as it can (hopefully) be eaten outside and that is still the safest way to meet others. It’s easy to prepare and everything can be made the day before so you can spend more time enjoying the company of friends and family.

Cucumber, Red Onion, Coriander, Tomato and Feta Cheese Salad
A Sandwich of Roast Chicken with Mustard, Orange and Fennel Seeds and Marinated Courgettes
Easy Raspberry and Almond Cake
For the salad first course use the Sherbhert recipe in these pages for Marinated Cucumber and Red Onion Salad and add some sliced small tomatoes, a teaspoon of olive oil and some Feta cheese. Make up individual portions and store and serve each one in a screw-topped jar. If necessary, this salad can be made a day in advance and stored in the fridge until needed.
The chicken sandwich can also be made a day in advance. Use a small ciabatta loaf for each person
Follow the recipes in these pages for Chicken with Mustard, Orange, Thyme and Fennel Seeds and Marinated Courgettes – An Easy Salad to Eat on Busy or Lazy Days Slice the cooked chicken and leave it in any cooking juices to get cold.
Slice each of the loaves in half and butter them.
Fill the loaves with the sliced chicken and some of the cooking juices.
Put some of the courgettes on the top of the chicken and sandwich each of the loaves together. Cut the sandwiches into manageable pieces and wrap them as tightly as you can in greaseproof paper or foil and store them in the fridge until you are ready to go.

You will also need some drinks and cups or glasses, a bottle opener, forks for the salad, napkins and of course don’t forget the hand sanitiser.
