Strawberries with Feta, Mint, Oil and Vinegar

A simple recipe making the most of some lovely summer ingredients. It’s good as a light lunch or to have before or after something more substantial.

I have not been too specific about quantities here. It is such an easy recipe to put together and it is best to make an individual little plate of this salad for each person. 

Medita is a lovely  British-made feta-style cheese which would be perfect to use here.

Some deliciously sweet English strawberries  (about 4 or 5 for each person)

A little balsamic vinegar – use the best you can find or use Liberty Fields Apple Balsamic Vinegar

Some Organic feta-style cheese (about 50g for each person) 

Some fresh mint leaves

A little extra virgin olive oil

A sprinkling of sea salt flakes

Assemble this salad just before you want to eat it.

  • Slice the strawberries and arrange each portion on a separate plate.
  • Sprinkle each portion with about a tablespoonful of balsamic vinegar.
  • Crumble 50g of feta cheese over the top.
  • Chop a few fresh mint leaves and scatter them over the cheese.
  • Drizzle a little oil over the top and then sprinkle a small pinch of sea salt flakes over that.
